  • 1 1/2 pounds ground turkey

  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil for frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 1 15-ounce can organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage
  • Fried sage leaves for garnish

Instructions

  1. In a large bowl, mix fresh breadcrumbs with milk; let sit for 2–3 minutes.
  2. Add minced onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, and both egg components; combine.
  3. Gently incorporate ground turkey along with salt and pepper until mixed.
  4. Shape into meatballs using a scoop and refrigerate for 20–25 minutes.
  5. In a skillet, heat oil and brown meatballs until cooked through (internal temp 165°F).
  6. For the sauce, sauté onion and garlic in ghee and olive oil; add pumpkin puree, chicken stock, and seasonings; whisk until smooth.
  7. Stir in cooked meatballs to coat in the sauce before serving.
