  • 2 medium sweet potatoes, quartered
  • 1 large tart apple, peeled and cored
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, chopped
  • 1 bay leaf
  • 5 cups chicken broth
  • 1 cup cream
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Optional: crumbled goat cheese or feta cheese for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place sweet potatoes and apple on a greased baking sheet; roast for about 40 minutes or until tender.
  3. Let cool before peeling the sweet potatoes.
  4. In a soup pot, heat olive oil over medium heat. Sauté onion, celery, bay leaf, and carrot until tender.
  5. Remove bay leaf and add chicken broth along with roasted sweet potato and apple.
  6. Blend the mixture until smooth using an immersion blender.
  7. Stir in cream, lemon zest, and juice; season with salt and pepper.
  8. Warm gently but avoid boiling; serve garnished with crumbled cheese if desired.
