  • 400g pasta
  • 2 roasted corn cobs
  • 3 green onions
  • 1 shallot
  • 2 jalapeños
  • ½ cup cilantro
  • 1 cup cotija cheese
  • 1 cup sour cream
  • ½ cup mayonnaise
  • Juice and zest of 1 lime
  • Smoked paprika
  • Chili powder
  • Salt
  • Pepper

Instructions

  1. Roast the corn in olive oil for about 10–15 minutes until golden, then remove kernels from the cob.
  2. Cook the pasta in salted boiling water until al dente; drain and toss with olive oil.
  3. Slice green onions and mince shallot, garlic, jalapeño, and cilantro while crumbling cotija cheese.
  4. Combine sour cream, mayo, garlic, lime juice and zest, smoked paprika, chili powder, salt, and pepper to make the dressing.
  5. In a large bowl, combine cooked pasta with corn kernels and all prepped ingredients. Pour dressing over salad and mix well.
