Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1 cup cold unsalted butter, cubed
  • 1/4 cup ice water (add more if needed)
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • Juice from 1/2 lemon
  • 1 cup confectioners' sugar
  • 1 tablespoon milk
  • Rainbow sprinkles

Instructions

  1. Prepare the Dough: In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Divide into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
  2. Make the Filling: Combine sliced strawberries with granulated sugar, cornstarch, pinch of salt, and lemon juice in a bowl. Let it sit while you roll out the dough.
  3. Roll Out the Dough: Preheat oven to 350°F (175°C). Roll out one disc into a rectangle large enough for your baking sheet lined with parchment paper.
  4. Assemble the Pie: Spread strawberry filling over the dough. Roll out the second disc and cover the filling. Seal edges and cut slits on top for steam release.
  5. Bake: Bake for about 25-30 minutes or until golden brown. Cool completely before glazing.
  6. Prepare the Glaze: Whisk together confectioners' sugar, milk, and vanilla extract until smooth. Drizzle over cooled pie and sprinkle with rainbow sprinkles.
