  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 4 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • 1 cup cream (for caramel sauce)
  • 1 teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a bowl, combine chopped dates with baking soda. Heat milk until scalding then pour over dates; let cool for about 15 minutes.
  3. Mix flour, baking powder, and salt in one bowl. In another bowl, beat eggs and blend with brown sugar, butter, and vanilla using a food processor.
  4. Gradually add dry ingredients into the egg mixture; mix until combined then fold in the date mixture to create a smooth batter.
  5. Pour batter into prepared dish and bake for approximately 30 minutes until set.
  6. For the caramel sauce, melt butter in a saucepan; add brown sugar and salt until dissolved. Stir in cream and simmer until thickened.
  7. Once baked, poke holes in the pudding surface and pour some caramel sauce over it; let absorb for about 15 minutes before serving.
