  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or regular)
  • ½ teaspoon black pepper
  • Parsley flakes (fresh or dried)

Instructions

  1. Preheat oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash mini potatoes thoroughly and set aside.
  4. In a bowl, combine cold water and 2 tablespoons of lemon juice. Soak the potatoes in this mixture to prevent browning.
  5. Carefully carve skull faces into each potato using a paring knife.

  7. Drain the soaked potatoes; toss in the seasoning mixture until evenly coated.
