  • 3 tbsp toasted sesame oil
  • 3.5 ounces shiitakes (torn)
  • 4 garlic cloves (grated)
  • 1 tbsp freshly grated ginger
  • 4 cups chicken broth (or vegetable)
  • 2 tbsp low sodium soy sauce
  • 1 can (14 oz) unsweetened coconut milk
  • 9 ounces instant ramen noodles
  • Toppings: boiled eggs, chili oil, sesame seeds, chives

Instructions

  1. Prep your ingredients: grate garlic and ginger; tear shiitakes.
  2. In a large pot, heat 1 tbsp sesame oil over medium heat. Cook shiitakes until browned; remove from pot.
  3. Reduce heat; add remaining sesame oil with garlic and ginger. Cook until fragrant.
  4. Deglaze the pot with chicken broth; bring to a boil.
  5. Stir in turmeric, soy sauce, coconut milk, red curry paste, and sambal oelek. Add ramen noodles when boiling.
  6. Cook noodles for about 2 minutes; serve topped with shiitakes, eggs, sesame seeds, chili oil, and chives.
