  • 250g whole milk (lukewarm)
  • 50g granulated sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs (room temperature)
  • 565g all-purpose flour
  • 850g apples (peeled and diced)
  • 30g unsalted butter
  • 190g unsalted butter (softened)
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 125g pecan halves
  • 115g unsalted butter (softened)
  • 225g cream cheese (softened)
  • 250g powdered sugar
  • 12 Tbsp plant-based whipping cream

Instructions

  1. Warm the milk and combine it with sugar in a mixing bowl. Sprinkle yeast and let it froth for 5-10 minutes.
  2. Add eggs and salt to the yeast mixture, then gradually mix in flour until dough forms. Incorporate softened butter and knead until smooth.
  3. Place the dough in a greased bowl, cover it, and let it rise until doubled (about 1 hour).
  4. For the filling, melt butter in a saucepan; add apples, sugar, cinnamon, salt, and cornstarch until slightly softened. Cool before use.
  5. Roll out the dough into a rectangle; spread softened butter, sprinkle cinnamon sugar, add apple filling and pecans.
  6. Roll tightly into a log shape and slice into 12 pieces. Let rise again for about 30 minutes on a lined baking sheet.
  7. Preheat oven to 350°F (175°C) and bake for approximately 25-30 minutes or until golden brown.
  8. Prepare frosting by mixing butter, cream cheese, powdered sugar, and heavy whipping cream until smooth.
  9. Once cooled slightly, frost each roll generously.
