  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped (optional)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box of corn muffin mix (8.5 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and ensure it is well-drained.
  3. In a mixing bowl, combine drained zucchini, chopped onion, corn, and jalapeño.
  4. Add half of the shredded cheddar cheese, eggs, garlic powder, cumin, salt, and black pepper. Mix until well combined.
  5. Gently fold in the corn muffin mix until just combined.
  6. Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
  7. Bake for about 50 minutes or until golden brown and set in the center.
  8. Allow to cool slightly before serving.
