  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup sauerkraut, rinsed and drained
  • 1 cup cooked corned beef (or turkey as a substitute), diced
  • 1 cup diced potatoes
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 cup heavy cream (or a plant-based alternative)
  • Salt and pepper, to taste
  • 1 cup shredded Swiss cheese (or another cheese of choice)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, cooking until softened.
  2. Pour in the beef broth and bring to a simmer. Stir in diced potatoes, sauerkraut, corned beef, caraway seeds, and thyme; cook until potatoes are tender.
  3. Reduce heat and mix in heavy cream and shredded Swiss cheese until melted and creamy.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh parsley.
