  • 1 cup shredded Swiss cheese
  • 3/4 cup sauerkraut, drained and squeezed dry
  • 4 ounces cream cheese, softened
  • 1/2 cup rye breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola)
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a large bowl, mix corned beef, Swiss cheese, sauerkraut, and cream cheese until well combined.
  2. Chill the mixture in the refrigerator for 20–30 minutes.
  3. Shape tablespoon-sized portions into uniform balls.
  4. Set up a breading station with flour, beaten eggs, and a mix of rye breadcrumbs and panko.
  5. Coat each ball in flour, then egg, followed by breadcrumbs.
  6. Heat oil in a heavy pan to 350°F (175°C) and fry balls in batches until golden brown (about 3–4 minutes).
  7. Drain on paper towels before serving with the spicy Thousand Island dipping sauce.
