Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine melted butter, pumpkin puree, sugar, egg, and vanilla until smooth.
  3. In another bowl, mix flour, pumpkin pie spice, baking powder, and salt; then add to the wet mixture until combined.
  4. Chill the dough in the refrigerator for about 25 minutes.
  5. Roll dough into balls (about 1 ½ tablespoons each) and place them on a parchment-lined baking sheet.
  6. Bake for approximately 18 minutes or until lightly golden.
  7. For the frosting, beat cream cheese and butter together until creamy; gradually add powdered sugar and mix in vanilla.
  8. Once cookies cool completely, frost each cookie generously.
