  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • Fresh thyme, salt, and pepper to taste
  • Chilli flakes (optional)
  • Walnuts (optional)

Instructions

  1. Preheat oven to 200°C/400°F.
  2. Peel and chop the butternut squash into cubes and place in an oven-safe dish.
  3. Add garlic cloves, thyme, olive oil, salt, and pepper; mix well.
  4. Place feta in the center of the dish; drizzle more olive oil over it.
  5. Roast for about 25 minutes until pumpkin is tender.
  6. Cook pasta in salted water during the last 10 minutes of roasting; reserve some pasta water before draining.
  7. Mash roasted garlic in the oven dish, break up feta, and stir.
  8. Add spinach and cooked pasta; use reserved pasta water to adjust consistency as needed.
  9. Top with optional chilli flakes and walnuts before serving.
