  • 4 Mini Pumpkins (or ramekins)
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. If using mini pumpkins, cut off the tops and remove seeds; if using ramekins, set them aside.
  3. In a mixing bowl, whisk together heavy cream, sugar, and salt until combined. Gradually add egg yolks, whisking until smooth.
  4. Stir in pumpkin puree, vanilla extract, cinnamon, and ginger until fully incorporated.
  5. Pour the mixture into mini pumpkins or ramekins and place in a baking dish filled with hot water halfway up the sides.
  6. Bake for about 30 minutes until set but slightly wobbly in the center. Allow to cool before refrigerating for at least two hours.
  7. Before serving, sprinkle granulated sugar on top of each custard and use a kitchen torch to caramelize it until golden brown.
