  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose (light corn syrup)
  • A few drops of black gel food coloring
  • 6 Granny Smith apples (fresh and unwaxed)

Instructions

  1. Prepare a greased baking sheet lined with baking paper.
  2. Insert bamboo skewers into each apple and set aside.
  3. In a saucepan, combine sugar, water, corn syrup, and black food coloring over medium heat. Stir until sugar dissolves and mixture simmers.
  4. Stop stirring and wash down the sides of the pot with a wet brush to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF). Check by dropping some mixture in ice-cold water to form brittle threads.
  6. Dip each apple into the caramel mixture, swirling for an even coat.
  7. Place dipped apples on the prepared baking sheet and let them cool completely before serving.
