  • 2 tablespoons lemon juice
  • 3 cups granulated sugar

  2. Wash the jalapeños, remove seeds for milder flavor, and chop them finely.
  3. In a large saucepan, combine chopped peaches, jalapeños, lemon zest, and lemon juice. Heat over medium-high until it gently boils.
  4. Gradually stir in sugar until fully dissolved. Maintain a rolling boil for 15–20 minutes until thickened.
  5. Test consistency by dipping a metal spoon; if it coats the back without dripping quickly, it's ready.
  6. Transfer hot jam into sterilized jars, leaving 1/4 inch of space at the top. Seal and let cool.
