  • 1 tablespoon cooking oil
  • 1 ½ cups cooked shredded rotisserie chicken
  • 15 ounces black beans (rinsed and drained)
  • 8.5 ounces canned corn (drained)
  • 2 tablespoons taco seasoning mix
  • 2 cups shredded colby jack cheese
  • Fresh tomatoes and cilantro for topping

Instructions

  1. Heat the cooking oil in a skillet over medium heat and fry each tortilla for 1–2 minutes on each side until golden brown. Drain on paper towels.
  2. In a mixing bowl, combine the shredded chicken with taco seasoning, then stir in black beans and corn.
  3. Preheat your oven to 375°F (190°C). Place the fried tortillas on a baking sheet, spoon the chicken mixture onto each, and top with cheese.
