  • 8 small boneless chicken thighs (approx. 650g/22.5oz)
  • 2 cloves of garlic
  • 1 jalapeño pepper
  • 3 tablespoons of tomato paste
  • 2 teaspoons of cumin
  • 2 teaspoons of paprika
  • 1/2 teaspoon of oregano
  • Juice of half a lime
  • Salt and black pepper
  • Assorted bell peppers and onions for skewering

Instructions

  1. In a mini food processor, blend garlic, jalapeño, tomato paste, cumin, paprika, oregano, lime juice, salt, and pepper until smooth.
  2. Dice chicken into bite-sized pieces and combine with marinade in a bowl. Marinate for at least a few hours or overnight in the refrigerator.
  3. Soak wooden skewers in warm water for 30 minutes if using.
  4. Assemble skewers by alternating marinated chicken pieces with bell peppers and onions.
  5. Cook on a hot grill for about 15 minutes or bake in an oven preheated to 220°C (425°F) for 25-30 minutes.
