  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked couscous
  • 1 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 cup Greek yogurt
  • 1/4 cup chopped cilantro
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. In a large bowl, combine chicken with olive oil, oregano, garlic powder, salt, and pepper. Toss until coated.
  2. Preheat grill or grill pan over medium heat. Grill chicken for about 5-7 minutes per side until fully cooked. Let rest before slicing.
  3. In a small bowl, mix Greek yogurt, cilantro, lemon juice, minced garlic, salt, and pepper.
  4. To assemble bowls, divide couscous among servings and top with sliced chicken, cucumber, red onion, olives, feta cheese, and drizzle with yogurt sauce.
