  • 2 chicken breasts (cubed or thinly sliced)
  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare your ingredients by slicing the chicken and halving the cherry tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper and cook until golden brown (about 5–7 minutes). Remove and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds, then add cherry tomatoes and cook for another 2 minutes.
  4. Pour in the chicken broth and bring to a gentle simmer. Stir in the cream along with lemon zest and juice—remove from heat briefly to avoid curdling.
  5. Add gnocchi to the simmering sauce and cook for about 3–4 minutes until tender. Toss in baby spinach just before finishing.
  6. Return cooked chicken to the skillet, season to taste, and garnish with fresh basil or parsley.
