  • 1 cup powdered sugar (for filling)

  • 12 tablespoons milk (as needed for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
  3. In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until a dough forms.
  4. Roll dough into small balls (about 1 inch), shape them into ovals, and create a crosshatch pattern using a fork. Sprinkle tops lightly with extra sugar.

  6. For the filling, beat together creamy peanut butter and unsalted butter until smooth. Mix in powdered sugar and vanilla extract; adjust texture with milk as needed.
