  • 2 cups cooked rice (warm)
  • 1/2 cup brown sugar
  • One 8 oz. can crushed pineapple with juice
  • 1/3 cup shredded coconut
  • 8 oz. whipped topping (thawed)

Instructions

  1. In a large mixing bowl, combine warm cooked rice and brown sugar until the sugar melts and everything is well mixed.
  2. Add the crushed pineapple along with its juice, stirring until fully incorporated.
  3. Cover the mixture and refrigerate for at least one hour to allow flavors to meld.
  4. Just before serving, gently fold in shredded coconut and thawed whipped topping until combined without deflating the topping.
