  • 3 tablespoons orange marmalade
  • 1 cup soy sauce
  • 12 skewers (if wooden, soaked in water)
  • Assorted vegetables (purple onion, red bell pepper)
  • 1/2 fresh pineapple (cut into chunks)
  • Olive oil

Instructions

  1. Marinate Chicken: In a gallon freezer bag, combine chicken with chicken broth, orange marmalade, soy sauce, ginger, and garlic powder. Seal and marinate in the fridge for 2-4 hours.

  3. Grill & Serve: Lightly oil the grill. Grill skewers for 8-10 minutes, turning occasionally until chicken is cooked through (165°F internal temperature). Garnish with fresh cilantro.
