  • 1 3/4 lb boneless, skinless chicken breast
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers
  • 1 large red onion
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together the marinade ingredients: ketchup, brown sugar, soy sauce, pineapple juice, olive oil (2 Tbsp), rice vinegar, garlic, ginger, sesame oil, salt, and pepper.
  2. Place the chicken in a resealable bag and pour most of the marinade over it (reserve 1/2 cup). Seal the bag and refrigerate for at least 1 hour.
  3. Preheat the grill to medium heat (about 400°F). Drizzle olive oil over chopped vegetables; season with salt and pepper.
  4. Thread marinated chicken pieces and vegetables onto skewers.
  5. Brush grill grates with olive oil and place skewers on the grill. Cook for about 5 minutes, brushing with reserved marinade. Flip skewers and grill until chicken reaches an internal temperature of 165°F (approximately another 4 minutes).
  6. Remove from heat and let rest before serving.
