  • 1 ripe avocado
  • 1 pound tomatillos
  • 1 jalapeño
  • ¾ cup fresh cilantro
  • 1 large lime
  • 1 large orange
  • 2 tablespoons avocado oil
  • ½ yellow onion
  • 2 cloves garlic
  • ¼ cup water
  • ½ teaspoon dry oregano
  • ½ teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • ½ teaspoon freshly-cracked black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 6 corn tortillas
  • 6 green onions
  • ¼ cup finely chopped white onion

Instructions

  1. Prepare the avocado salsa by cooking tomatillos, yellow onion, garlic, and jalapeño until soft. Blend with cilantro, lime juice, oregano, and salt until smooth.
  2. Marinate the skirt steak in orange juice, lime juice, cilantro, and spices for at least 15 minutes.
  3. Grill the marinated steak for about 4-5 minutes on each side until desired doneness.
  4. Warm corn tortillas on the grill for 30 seconds on each side.
  5. Assemble tacos by layering sliced steak on tortillas topped with avocado salsa and garnished with green onions.
