  • 4 boneless chicken thigh fillets
  • 3 tablespoons olive oil
  • 100 ml lime juice
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 5 cups Romaine lettuce
  • 2 avocados
  • 1 pinch cilantro (extra to garnish)
  • 1 pinch sour cream (optional)

Instructions

  1. In a bowl, whisk together olive oil, lime juice, chopped cilantro, garlic, brown sugar, chili flakes, cumin, and salt.
  2. Pour half the marinade into a shallow dish and coat the chicken fillets. Marinate for at least 30 minutes.
  3. Heat one teaspoon of olive oil in a grill pan over medium-high heat and grill the chicken for about 6–7 minutes on each side until cooked through. Let rest before slicing.
  4. Sauté sliced bell peppers and onions in the same pan until tender.
  5. In a large bowl, layer the Romaine lettuce and top with avocado slices, grilled chicken strips, sautéed vegetables, and drizzle with remaining marinade.
