  • 1 tbsp unsalted butter
  • 1 shallot (finely chopped)
  • 4 garlic cloves (minced)
  • 1 tsp dried basil
  • 1 can (14 oz) cherry tomatoes
  • 2 mozzarella balls (chopped)
  • Fresh basil leaves (for garnish)

Instructions

  1. Season chicken fillets with salt, pepper, garlic powder, and paprika.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Cook the chicken for about 5 minutes on each side until browned and fully cooked. Remove from skillet and cover.
  3. In the same skillet, add minced garlic and chopped shallot; cook until fragrant. Deglaze with apple vinegar and simmer while scraping the pan.
  4. Stir in salt, pepper, dried basil, tomato paste, and chicken broth; add canned cherry tomatoes and bring to a boil.
  5. Reduce heat to simmer for about 5 minutes; nestle cooked chicken back into the sauce.
  6. Top with chopped basil and mozzarella cubes; simmer for an additional 5 minutes until cheese melts.
