  • 45 boneless, skinless chicken thighs
  • 3 cups chopped romaine lettuce
  • ½ cup shaved Parmesan cheese
  • 1 large egg (for marinade and dressing)
  • Canola oil (for frying)
  • Panko breadcrumbs

Instructions

  1. In a large bowl, mix the marinade ingredients and coat the chicken thighs. Let marinate for at least 20 minutes.
  2. Prepare the panko topping by melting butter in a frying pan over medium-low heat, adding panko, and stirring until golden brown (about 3-4 minutes). Set aside.
  3. Blend all Caesar dressing ingredients in a blender until smooth; adjust salt to taste.
  4. Heat canola oil in a pot to 350°F (175°C) and fry marinated chicken until golden brown and cooked through (approximately 8–10 minutes). Drain excess oil on a wire rack.
  5. Assemble sandwiches by mixing romaine lettuce with Caesar dressing, toasted panko, and Parmesan cheese. Spread extra dressing on croissant bottoms, add fried chicken, top with salad mixture and cover with croissant tops.
