2 small sweet potatoes
1 small onion, diced
200g mushrooms, sliced
2 garlic cloves, crushed
60g spinach
1 heaped tbsp tahini
1 tsp nutritional yeast
Juice of ½ a small lemon
Salt and pepper, to taste
Preheat your oven to 400°F (200°C).
Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet and roast for about 40 minutes until tender.
In a frying pan over medium heat, sauté the onion until translucent (4-5 minutes). Add mushrooms and cook until they release moisture (5 minutes). Stir in garlic and spinach until wilted (2 minutes).
Remove from heat and mix in tahini, nutritional yeast, lemon juice, salt, pepper, and optional cayenne.
Slice each roasted sweet potato down the middle without cutting through. Fluff the insides with a fork and fill generously with the mushroom-spinach mixture.
