  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 can whole kernel corn (15 oz), drained
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup diced potatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • Sliced green onions, for topping
  • Extra shredded cheese, for topping
  • Crushed tortilla chips, for topping

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
  2. Add diced onion and minced garlic; sauté until the onion is translucent.
  3. Pour in beef broth along with diced tomatoes (with juice), corn, black beans, potatoes, smoked paprika, chili powder, cumin, salt, and black pepper. Stir well.
  4. Bring to a boil; then reduce heat and simmer uncovered for about 20 minutes or until potatoes are tender.
  5. Stir in heavy cream and shredded cheddar cheese; cook for an additional 5 minutes until heated through.
  6. Serve hot topped with sliced green onions, extra cheese, and crushed tortilla chips.
