  • 4 medium sweet potatoes
  • 1 cup fresh cranberries (or frozen, thawed)
  • 2 medium Granny Smith or Honeycrisp apples
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Thoroughly wash the sweet potatoes and pierce each several times with a fork. Place them on a baking sheet lined with aluminum foil and bake for 45-60 minutes until tender.
  3. While the sweet potatoes bake, chop the apples into small pieces and set aside.
  4. Once baked, allow sweet potatoes to cool slightly before cutting in half lengthwise and scooping out most of the flesh into a mixing bowl.
  5. Add chopped apples, cranberries, brown sugar, cinnamon, unsalted butter, and salt to the bowl, then mash until combined.
  6. Spoon the filling back into the sweet potato halves and return them to the oven for an additional 15-20 minutes until heated through and golden.
