  • 1 medium onion, diced
  • 1 lb mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 (15 oz.) cans white beans, drained and rinsed
  • 1 lb baby potatoes, cubed
  • 3 cups vegetable broth
  • 2 cups dairy-free milk

Instructions

  1. In a large pot over medium heat, melt vegan butter. Sauté diced onion until softened.
  2. Add sliced mushrooms along with thyme, rosemary, salt, and pepper; cook until browned.
  3. Stir in minced garlic and cook for another minute.
  4. Sprinkle in cornstarch and mix well; then add tamari and Dijon mustard.
  5. Pour in vegetable broth and bring to a boil before adding cubed baby potatoes.
  6. Reduce heat to simmer for 15–20 minutes until potatoes are tender.
  7. Stir in white beans and dairy-free milk; simmer for another 10–15 minutes until thickened.
