  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 4 tablespoons chopped cilantro (stems and leaves)
  • 2 tablespoons lime juice
  • 1 teaspoon red chili flakes
  • Salt (to taste)
  • Lime wedges and chopped cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the olive oil, minced garlic, chopped cilantro, lime juice, red chili flakes, and salt.
  3. Add the chicken thighs to the marinade and coat evenly. Let marinate for at least 15 minutes (up to 2 hours for optimal flavor).
  4. Heat a skillet over medium-high heat. Place the chicken skin-side down in the skillet and cook until browned (about 4–5 minutes). Flip and brown the other side for another 4–5 minutes.
  5. Spoon any remaining marinade over the chicken, then transfer the skillet to the preheated oven. Bake for about 20 minutes or until cooked through.
  6. Serve garnished with fresh lime juice and chopped cilantro.
