  • 4 boneless skinless chicken breasts
  • 1 Tbsp lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic (minced)
  • 1 1/2 medium ripe avocados (diced)
  • 2 medium Roma tomatoes (chopped)
  • 1/2 cup chopped red onion (rinsed under cool water)
  • 1 clove garlic (minced)
  • 1 Tbsp fresh lime juice
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, combine lime zest, lime juice, olive oil, honey, chopped cilantro, minced garlic, salt, and pepper. Add chicken breasts to the marinade and refrigerate for at least 15 minutes.
  2. Preheat the grill or grill pan over medium-high heat and lightly brush with olive oil.
  3. Grill the marinated chicken for about 5-7 minutes on each side until fully cooked.
  4. While grilling, mix diced avocados, tomatoes, red onion, garlic, and lime juice in another bowl to make the salsa.
  5. Once grilled, let the chicken rest briefly before slicing and serving topped with avocado salsa.
