  • 1 1/2 cups fresh raspberries

  • 1 1/2 cups heavy cream (divided use)
  • Pinch of salt
  • 2 tsp unflavored powdered Vegan Gelatin
  • 2 TBSP water
  • pink gel food coloring (optional)

  • 4 oz heavy cream
  • 1 pint fresh raspberries
  • Chocolate curls (or other decorations)

Instructions

  1. Preheat oven to 350°F (175°C) and grease 9-inch round cake pans.
  2. Prepare brownie batter by combining dry ingredients and mixing with melted butter and eggs.
  3. Bake for about 24 minutes; cool completely.
  4. Make chocolate mousse by melting chocolate and folding into whipped cream; layer over cooled brownies.
  5. Blend raspberries and prepare raspberry mousse; layer over chocolate mousse.
  6. Prepare vanilla mousse and spread over raspberry layer.
  7. Chill cake for several hours or overnight before decorating with ganache and fresh raspberries.
