  • 1 large egg (room temperature)
  • 1¼ cups flour (163 grams, fluffed and leveled)
  • â…“ cup unsweetened cocoa powder (30 grams)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together room temperature butter and granulated sugar until light and fluffy. Add vanilla extract and egg; mix well.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually combine dry ingredients with the wet mixture until just incorporated.
  4. Scoop tablespoon-sized portions onto a lined baking sheet, spacing them apart. Bake for 8-10 minutes until set but soft in the center. Cool on the sheet for 5 minutes before transferring to a wire rack.
  5. For frosting, beat powdered icing sugar, butter, milk, mint extract, and optional green food coloring until smooth.
  6. Frost half of each cooled cookie with mint frosting. Melt semisweet chocolate chips with oil in intervals until smooth; drizzle or spread over frosted cookies.
