  • 1 lb. boneless skinless chicken breast
  • 1 small yellow onion
  • ¾ cup diced carrots
  • 2 ribs diced celery
  • 3 cloves minced garlic
  • 5 cups chicken broth
  • 1 ½ lbs. Yukon gold potatoes
  • 1 cup half and half
  • 6 strips thick cut turkey bacon (plus 2 tbsp. turkey bacon drippings)
  • Salt
  • Pepper
  • 12 teaspoons olive oil
  • ¼ cup flour
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes
  • 1 ½ cups cheddar cheese (shredded)
  • Green onions (to garnish)

Instructions

  1. Cook turkey bacon in a large pot over low heat until crispy. Set aside and reserve drippings.
  2. Season chicken with salt and pepper; sear in olive oil over medium-high heat until golden brown. Let rest before cutting into pieces.
  3. In the same pot, add reserved drippings and sauté onions, carrots, and celery until softened.
  4. Stir in garlic, hot sauce, Worcestershire sauce, and herbs.
  5. Sprinkle flour into the pot and cook for two minutes.
  6. Gradually whisk in chicken broth and half and half until smooth.
  7. Add chopped potatoes and seared chicken; bring to a boil then simmer until potatoes are tender.
  8. Stir in cheese if desired, then serve hot garnished with green onions.
