  • 1 cup European style unsalted butter (browned)
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk (room temperature)
  • 1/2 cup canned pumpkin (blotted)
  • 2 tsp vanilla extract

Instructions

  1. Prepare brown butter by melting it in a saucepan until browned; cool for about 30 minutes.
  2. Blot pumpkin puree using paper towels to remove excess moisture.
  3. Whisk together flour, spice blend, baking soda, and salt in a bowl; set aside.
  4. In a separate large bowl, mix cooled brown butter with brown sugar and maple syrup until combined. Add egg yolk, blotted pumpkin puree, and vanilla; mix well.
  5. Gradually combine dry ingredients into wet mixture until just blended.
  6. Chill dough in the refrigerator for at least 8 hours.
  7. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  8. Roll cookie dough into balls coated in spiced sugar and place on prepared sheets.
  9. Bake for 12-14 minutes, checking around the 9-minute mark.
  10. Cool on baking sheets before transferring to cooling racks.
