  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper. Whisk until well mixed.
  3. Place beef short ribs in a shallow dish and pour the marinade over them. Ensure they are fully coated and marinate for at least 30 minutes or overnight.
  4. Heat oil in a large oven-safe pot over medium-high heat. Sear the ribs on all sides until browned (about 2-3 minutes per side).
  5. Pour the marinade over the seared ribs in the pot. Cover and slow roast in the preheated oven for about 3 hours or until tender.
  6. Remove ribs from the pot and mix cornstarch with water to create a slurry. Add to remaining marinade in the pot and simmer until thickened (about 5 minutes). Brush glaze over ribs and broil under high heat for 5-10 minutes until caramelized.
  7. Allow resting time of about 15 minutes before slicing.
