Ingredients

Scale
  • 12 oz pasta (spaghetti, fettuccine, or penne)
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon sugar (optional, to help caramelize)
  • Salt and pepper, to taste
  • 1/4 cup olive oil (for chili oil)
  • 1 tablespoon chili flakes (adjust based on preferred spice level)
  • 1 garlic clove, minced
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • Fresh parsley, chopped (optional)
  • Grated Parmesan cheese (optional)
  • Extra chili oil (optional)

Instructions

  1. In a large skillet, heat olive oil and butter over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook for 25-30 minutes until deep golden brown, stirring occasionally.
  2. Boil salted water in a pot, add pasta, and cook until al dente; reserve ½ cup pasta water before draining.
  3. For chili oil, combine olive oil, chili flakes, minced garlic, and salt in a saucepan over low heat for about 5 minutes until fragrant.
  4. In a bowl or skillet, mix cooked pasta with caramelized onions and reserved pasta water as needed. Drizzle with chili oil and toss to combine.
  5. Serve warm, garnished with fresh parsley or extra chili oil if desired.
