  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat grill to medium-high heat. Season the chicken or steak with chili powder, cumin, salt, and black pepper.
  2. Grill the protein for 2-3 minutes on each side until fully cooked. Remove from heat.
  3. In a mixing bowl, combine diced tomatoes, red onion, cilantro, jalapeño (if using), lime juice, salt, and pepper to make pico de gallo.
  4. In a small bowl, whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and pepper to prepare the chipotle aioli.
  5. Assemble bowls by dividing cooked rice among serving dishes. Top with grilled protein, pico de gallo, cilantro, and drizzle with chipotle aioli.
