  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp heavy cream
  • 1 1/4 cup all-purpose flour
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream/butter
  • 2 cups heavy cream for ganache
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8 inch baking pan.
  2. Brown the butter in a saucepan over medium heat, then combine with sugars before adding the egg, heavy cream, and vanilla.
  3. Mix dry ingredients separately and fold into the wet mixture. Add chocolate chips.
  4. Bake the cookie base for about 25 minutes or until lightly golden.
  5. Toast the kataifi in melted butter until crispy, then mix with pistachio cream.
  6. Prepare chocolate ganache by heating heavy cream and pouring it over chocolate chips; mix until smooth.
  7. Assemble by layering the pistachio filling over the cooled cookie base and topping with ganache and chopped pistachios.
