  • 4 fillets of white fish (tilapia, cod, or mahi-mahi)
  • 1 tablespoon olive oil
  • 2 cups cooked rice (white, brown, or cauliflower)
  • 2 cups shredded lettuce or cabbage
  • 1 cup black beans
  • 1 avocado
  • ½ cup pico de gallo
  • Creamy sauce (Greek yogurt or sour cream, lime juice, garlic powder)

Instructions

  1. Prepare the spice blend by mixing smoked paprika, chili powder, cumin, garlic powder, onion powder, salt, black pepper, and optional cayenne.
  2. Pat the fish fillets dry and rub with olive oil and spice blend. Squeeze lime juice over them.
  3. Heat a large skillet on medium-high heat and cook the fish for 3–4 minutes per side until blackened.
  4. In a small bowl, whisk together Greek yogurt (or sour cream), lime juice, garlic powder, chili powder, and salt for the creamy sauce.
  5. Assemble bowls by dividing rice among four bowls followed by toppings: lettuce/cabbage, black beans, corn, fish fillet, avocado slices, pico de gallo, cilantro, and drizzle with creamy sauce.
