  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In one bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In another bowl, mix pumpkin puree with granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until combined.
  4. Gradually fold in the dry ingredients until just mixed.
  5. In a separate bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  6. Fill muffin cups 3/4 full with batter and add a tablespoon of cream cheese mixture on top; swirl gently using a toothpick.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool before serving.
