  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar (light or dark)
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and slice them into thin medallions.
  3. Arrange the medallions in a baking dish.
  4. In a medium saucepan over medium heat, melt the butter with brown sugar, water, spices, and salt until smooth.
  5. Brush three-quarters of the sauce over the sweet potatoes and cover with foil.
  6. Bake for 45-50 minutes.
  7. Remove foil, pour remaining sauce over the top, then sprinkle with pecans and vegan marshmallows.
  8. Broil for 1-2 minutes until marshmallows are golden brown.
  9. Let cool for 10-15 minutes before serving.
