  • 2 pounds Yukon Gold potatoes
  • 4 yellow onions
  • 2 tablespoons olive oil
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 cup parmesan cheese (freshly grated)
  • Fresh herbs: chives, thyme, and sage

Instructions

  1. Prepare the onions by slicing them thinly.
  2. In a skillet over medium heat, heat olive oil and add the sliced onions. Cook for 40-50 minutes until caramelized.
  3. Meanwhile, wash and chop the potatoes (peeling is optional) and boil in salted water for about 20 minutes until fork-tender.
  4. Drain the cooked potatoes and mash until smooth.
  5. Mix in butter, half & half (or coconut milk), and salt until combined.
  6. Stir in half of the caramelized onions and grated parmesan cheese.
  7. Serve topped with remaining caramelized onions and fresh herbs.
