  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F (165°C). Line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing fully after each addition. Then mix in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, ginger, and nutmeg.
  5. Gradually add the dry ingredients to the butter mixture alternating with apple cider.
  6. Gently fold in the grated apples until just combined.
  7. Pour batter into the prepared loaf pan and bake for 55–60 minutes or until a toothpick comes out clean.
  8. Allow cooling for about 15 minutes before removing from the pan to cool completely on a wire rack.
