  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for topping)
  • ½ cup sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Reduce apple cider in a saucepan over medium heat until halved (20-30 minutes). Cool while preheating the oven to 350°F.
  2. Grease a 9×5 loaf pan.
  3. Cream together softened butter and brown sugar until fluffy.
  4. Beat in egg and vanilla extract.
  5. Mix dry ingredients and cooled cider into the creamed mixture until just combined.
  6. Pour batter into prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  7. Cool in pan for 15 minutes before transferring to a rack.
  8. Brush with melted butter and sprinkle with cinnamon-sugar topping.
  9. Allow to cool for at least an hour before slicing.
