  • 3 tbsp granulated sugar
  • 1¾ cups all-purpose flour
  • 2½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¾ cup unsalted butter
  • 6 oz cream cheese
  • 2 egg yolks
  • 2 tsp vanilla
  • 1/4 cup granulated sugar for cheesecake filling
  • 2 tbsp apple cider reduction for cheesecake filling
  • 1/4 cup granulated sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter for topping, melted

Instructions

  1. Simmer apple cider in a saucepan over medium heat until reduced by half, about 30 minutes; let cool.
  2. For the cheesecake filling, mix cold cream cheese with sugar, vanilla, and cooled apple cider reduction until smooth.
  3. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. Cream softened butter and sugars until fluffy; add egg yolks and vanilla.
  5. In another bowl, whisk flour, spices, baking powder, baking soda, and salt; combine with wet mixture until blended.
  6. Form cookie dough balls with cheesecake filling inside; bake for about 11 minutes until edges are golden.
  7. Brush warm cookies with melted butter and sprinkle with spiced sugar blend.
