Ingredients

Scale
  • 7 quarts plain popped corn
  • 2 cups slivered almonds (or substitute with cashews, macadamia nuts, or pecans)
  • 2 cups packed brown sugar
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • 1 cup unsalted butter
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 250°F (120°C) to prepare for baking.
  2. Pop the corn using your preferred method; transfer it to a large mixing bowl.
  3. In a saucepan over medium heat, melt the butter and stir in brown sugar and light corn syrup until combined. Add salt and bring to a boil while stirring continuously; boil without stirring for about 4-5 minutes.
  4. Remove from heat and carefully stir in baking soda and vanilla extract (the mixture will bubble). Pour the hot caramel sauce over the popcorn and nuts; mix thoroughly to coat evenly.
  5. Spread the coated popcorn on a baking sheet and bake for 1 hour, stirring every 15 minutes for even coating.
  6. Allow it to cool completely before breaking into pieces.
